Ichi-ban Boshi Sydney City

Sydney CBD Open Now

Ichiban Boshi The Galeries, George Street, Sydney CBD

For more than twenty years, Ichiban Boshi has been the reliable ramen benchmark in Sydney’s CBD. Long before the current wave of ramen specialists arrived, this galley-style diner was already had the formula nailed: house-made noodles pulled fresh daily, tonkotsu broth simmered until it’s deeply porky yet remarkably clean on the finish, and a streamlined ticket-system service that gets you fed and out the door without drama.

The signature Tonkotsu Ramen remains the one to order — silky, collagen-rich broth, bouncy alkaline noodles, melt-in-the-mouth chashu and a perfectly molten ajitama egg (order it soft, always). The black garlic oil version adds an extra layer of fragrance without overpowering, while the spicy miso is punchy enough to cut through even the worst hangover.

Seating is tight and turnover is fast, but that’s part of the charm. Lunch queues move quickly, tables are shared without awkwardness, and you’re never made to feel rushed once your bowl arrives.

In a city now spoilt for excellent ramen, Ichiban Boshi still stands out for one simple reason: consistency.
