Kajiken brings one of Japan’s cult noodle styles to Sydney: abura soba, the soupless ramen that puts every bit of pressure on the noodles, sauce and toppings to deliver. And here, they do. The thick, chewy strands are made in-house daily, rested for up to two days, and served with a glossy, savoury sauce that clings to every fold. It’s a different kind of comfort — less slurp, more chew, more punch.
The Homura Abura Soba is the bowl to order. Minced pork, bamboo shoots, nori, spring onion, a dusting of niboshi fish powder and a raw egg yolk waiting to bind everything together. Mix it thoroughly and the flavours land in a way broth can’t — salty, smoky, rich and sharply umami. The wagyu version layers on thin slices of beef with a sweet onion sauce and crunchy fried shallots, turning the dish into something unexpectedly indulgent.
